In the shadow of the El Misti volcano--as well as bigger tourist draws such as Machu Picchu--the laid-back southern Peruvian colonial city of Arequipa has to be one of South America's most underrated destinations. Buildings constructed from nearby volcanic rocks give the city an elusive airiness, while brightly painted courtyards ensure no lack of energy either. The absolutely stunning Santa Catalina Monastery and the nearby Colca Canyon are among the most memorable places that I've ever visited, but more than anything else, this is a place where you just want to sit back, relax, and soak up the sun(set).
